Culinary art is the art of cooking. This summer CMEE is offering a culinary arts program which will offer a diverse and unique assortment of cooking classes for the week. The classes will be varied to offer continuous options allowing students to take advantage of learning the newest culinary trends while keeping the traditional values of cooking incorporated into all the sessions. Field trips are planned to the Ludlow Farm where your child will participate in the making of cheese and EECO Farm. Art projects are planned as well, such as slate cheeseboards, clay butter terrines and garlic hanging baskets. Our culinary artists in residence are Jennifer DeSane of Cakeworks Studio and Christine Clemens of Food & Co. The workshop will be divided into two categories, culinary organic cooking and cookie and cake decorating. In the cake-works section of the class, students will get an introduction to the art of cake decorating. The class will cover the basics of buttercream (including how to make the perfect buttercream rose), piped royal icing decorations, color flow techniques (for designing beautiful cookies), and we will finish off the week with each student decorating a beautiful cake with fondant and gumpaste decorations. Students will take away from this class a working knowledge of what it takes to work in this fun and creative field. Your child will be cooking like a pro!Jennifer DeSane is the Executive Pastry Chef and Owner of Cakeworks Studio. She is also a proud member of the International Cake Exploration Societe (ICES).
