In The Kitchen – Miss McKenna’s Quick Pickles

So easy. So fast. We call these pickles…quickles! You cannot mess them up! The is a wonderful early learning recipe for littles and novice pickle-ers, alike.

Give your child full control over this experiment and let them use the knife! A butter knife, or plastic knife should work just fine to cut through a cucumber. Slices can be thick, thin, and definitely uneven. It’s okay! The differences in slices will make for great conversations in comparison, and will still be delicious.

Ingredients

  • 2-3 medium cucumber, sliced
  • 1/3 cup vinegar
  • 1 cup water
  • 1 tbsp sugar
  • 2 tsp salt
  • Flavor Options: Add small sweet onion, garlic, pickling spice, dill, cilantro, mustard seed, fennel seed, Old Bay, Tajin, or horseradish. You can add these flavors, or any other, alone or together. Play around! Find your families favorite combination.

Directions

  1. Combine all ingredients in a large jar
  2. Seal it up tight
  3. Shake it
  4. Store in the fridge for 2 hours, or overnight. That’s it!
